Improvisational “empty fridge” lunch! It’s always nice to make too much brown rice for when everything else in your fridge is gone! Luckily I had a little bit of green onions, half of an avocado, nori snax, spicy sesame oil and lemon! Mix and eat!
Total surprise improv at a friend’s house with nothing for a Vegan in her fridge but the Quinoa I brought and some veggies for a macaroni salad she was making! I threw together some celery and cilantro and tossed it into my Quinoa and dressed it with lime, olive oil and salt! Delicious and fresh!
I may be able to kick my coffee addiction after all! This delicious drink is incredibly flavorful, rich and made from roasted Barley and Rhye! I discovered it at Whole Foods the other day and now I won’t be tossing and turning when I get the urge to have a cup of coffee at night! I’ll just have a cup of INKA and I’ll be O.K.!!
When one practices “Conscious Eating” there is very little room for junk if it’s done right. Ever since I became a conscious eater, almost 9 months now, I’ve become wonderfully creative with what I put in my body for nourishment. I don’t consume meat of any kind, dairy or bread. I left most sugars behind except for Coconut sugar and occasionally raw cane sugar. My food selection is made up of fresh fruits, greens, vegetables and legumes. I try hard not to eat too much soy or processed foods.
So what am I left with on days when I crave junk???

Here is a picture of a decadent lentil taco! Yes, it is fried and yes there is vegan cheese in the taco along with roasted salsa and celery for crunch!
It was delicious!!! Those of you who follow my blog know that I frequently experiment with lentils and all of its applications. Here they are mimicking potato as in a delicious “Mexican Potato Taco”. At least I fried it in Grape Seed Oil!
Posting this is making my mouth water! ”Vegan Pizza Party tomorrow ha?….all I want is that incredible Tea Leaf Salad from our best place in San Francisco, Burma Superstar!” Then we were off to our second best place in SF, Groove Merchant!
